Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Citrus Syrup: Place all the items in a saucepan, heat until it reaches a gentle boil, agitating to dissolve. After that, take off the heat and let it to cool down completely. Decant to a sealable bottle, seal and refrigerate it in the fridge, where it will keep for around one month.

Preparing the Cocktail Base: Pour all the liquid ingredients in a sizeable container, allow it to infuse for 60 minutes, then strain preferably using cheesecloth, so it's completely strained.

To serve: Pour 85ml of the batch mix into a mixing glass packed with ice, gently stirring gently for about 60 seconds to cool it down. Filter into a chilled martini glass or a similar vessel, decorate with some cranberries and finish with a quick spritz of the essential oil over the drink.
